standard fuel

So today was a day full of easy favorites for me.  These meals/snacks show up on my blog pretty consistently because I love them all so much and they are so quick to prepare.  Honestly, if you asked me what my favorite easy + healthy breakfast, lunch, snack and dinner were these are probably the answers you would get.  Kind of a quick post tonight…goes with the theme of my quick eats!  🙂

Breakfast:  my standard banana, PB, flax and fig oats…yum. (this b-fast is tied with my ezekiel muffin, PB and fruit combo, which is my go-to if I’m running late and need to take b-fast with me).


This oat bowl contained the usual:

  • 1 cup water, pinch of salt, 1/2 cup rolled oats, 1 tsp vanilla
  • 1 small mashed banana
  • sprinkle of cinnamon
  • 1 tsp ground flax seeds
  • 1 dried fig
  • 1 tbsp natural peanut butter

Lunch:  baked sweet potato with 1/4 cup edamame and 1/4 cup corn…such a good combo and SO filling.


Snack:  1/2 cup plain Fage 0% and 5 strawberries…the yogurt helps pick me up and keep me going through the rest of the afternoon, and makes me think I’m eating dessert.  🙂


Snackie Treats:  I had a serious sweet tooth today!  I ran to the CVS across the street for some Dove dark chocolate hearts and ate 3 throughout the day.  I also had a date while fixing dinner.


Dinner:  tofu veggie stir fry on jasmine rice…a quick, easy vegetarian favorite!  We try to add bamboo shoots and water chestnuts, but forgot again tonight as usual.  We never remember until we’ve finished the meal!


This was a collaborative effort between my hubb and I tonight.  He took care of the veggies, I took care of the rice, wheatberries and tofu.  Our delectable meal contained:

  • 12oz pan-glazed tofu
  • 1 red bell pepper
  • 3 celery ribs
  • 1 broccoli floret
  • 2 carrots
  • 1 onion
  • jasmine rice
  • wheatberries
  • soy sauce
  • trader joe’s soyaki sauce
  • sesame seeds

First I pan-glazed the tofu with my usual method.


This glaze consisted of (measurements are estimates…):

  • 1/2 cup water
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp orange juice
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes


The tofu turns out just crispy on the outside, firmly silky on the inside.  We LOVE it this way, and haven’t been able to stray in years.


My hubb sauteed the veggies in a bit of olive oil and soysauce, then added the Trader Joe’s soyaki sauce and tofu once the veggies were tender.  This sauce is really great.  We usually buy Veri Veri Teriyaki sauce from Soy Vay, but I picked this up last time I was at TJ’s and it is almost as good, for much less $$$!


My bowl contained 1/2 cup jasmine rice, 1/2 cup wheatberries (boiled tonight to keep for the week) and about 1-1/2 cups of veggies + tofu.  Yum!


Dessert:  a Quaker True Delights toasted coconut banana macadamia nut granola bar, split with my hubb.  YUM!!!!!!  These bars are brilliant.  Absolutely brilliant.  When I opened the package I almost passed out from the unbelievably good scent that met my nose.  And the flavor was perfect…not artificial tasting at all.  I could eat one for dessert every night, and they are only 140 calories!  


Exercise:  YOGA!!!!  Mmmmmmmm.  We’ve been having an ice storm for most of the day so the sidewalks were far to treacherous for a run this evening.  I didn’t even want to go back out to the yoga studio and drive on the slick roads.  So, instead, I popped my favorite Power Yoga dvd into my computer and stretched out my unused muscles for 55 minutes.  It felt SO good, but made me realize how much my week off from exercise has affected my strength, flexibility and endurance!  Good news though, my foot felt GREAT!  I’m READY for a run, as soon as the weather cooperates!  🙂

Question, What’s your favorite yoga pose?  Least favorite?  I think my favorites are pigeon and twisted triangle, my least favorite is currently twisted prayer lunge (I think that’s what its called…).

  3. I’m not a fan of bananas but I really want to try your oatmeal combination. It always looks so filling and comforting.

    Great sweet potato/edamame combo, I will have to give that a try too.

    Mmm and your stir-fry sounds amazing!! I love the tofu marinade.

    Least Favorite? The yoga pushup! My arms are so weak!

  4. You are making me itch to get back into yoga! The only good place in our apt to lay out the mat is right by our balcony door and its drafty and the 18 degree wind makes it in.

    Maybe I will have to buy a few class passes to a studio or something.

    PS- You are making me want to try tofu…now getting the bf to go along…thats another story 🙂

    That tofu looks AMAZING. I will HAVE to try it. The boyfriend hates [the idea of] tofu, but maybe he’ll warm up to something as delicious as that.

  8. My boyfriend used to be totally opposed to tofu until I baked in in the oven and it got all crispy (it looks a lot like the way you made it) … delicious!!

    Nothing like a little bit of yoga to make you feel great!

  10. fave is pigeon for sure! Least fave = happy baby….isn’t it so awkward!?? I LOOOVE LOVE soyaki, i just pour it straight in the skillet and saute my veggies it’s so perfect 😀

  11. I love Fage yogurt and Pigeon Pose so much! Pigeon feels so great on my hips. Tree is another favorite. My least favorite poses are Camel & Half Moon. I have so much trouble with the latter. Hopefully, as my balance improves, I’ll like more and more.

  13. I really need to try tofu! My husband is set against it, but maybe if I do it right, he will like it!

    I’m still new to yoga, but so far my favorite is tree pose and least is warrior.

  14. I had a tofu & veggie stirfry on the menu for tonight, but moved it to later in the week because I already had dinner in the fridge! great minds think alike and I am totally doing your tofu methoD! sounds YUM!! does it get crispy like baking does?? we dont have any soyaki, but i’ll make do 🙂

    Your tofu looks remarkable. Next time I made it I am doing it stove top instead of baked! Also, I need to remember to get that TJs sauce!

  17. Oh yoga poses – I have different favorites at different times – right now I am feeling pigeon. I like that one a lot. I generally dislike inversions.

    Love Veri Veri Teriyaki (and Yoshida’s…but that may just be a local thing) and we always add bamboo shoots and water chestnuts to our stirfrys. Totally overlooked vegetables in my book.

    I may try your tofu technique. I love the Gliding Calm but maybe you can coin your own technique?

    My favorite yoga pose is the Dancing Shiva. I can actually do it and it always feels so graceful and poised, two things I generally am NOT 😉

    My favorite pose is either reverse warrior or forearm balance (I like the challenge and strength!). Least favorite would definitely be revolved triangle…I always feel like I am in someone else’s body.

  23. I did yoga last night too! I’m going to start doing it as much as possible – trying out one of those yoga downloads tonight. I love shoulder stand – it really clears my head. I don’t like any pose that requires lots of hamstring stretching – mine are tight!

    Sarah W – I’ve never baked my tofu before (WHAT?!?!?) hehe. So I’m not sure how the crispiness compares. Mine is firm on the outside, but covered with glaze so that keeps it from being totally crispy. Read the swiss chard post for more detailed instructions…

  30. Kate – I typically buy Natoya brand or Whole Foods brand, extra firm tofu, but firm works as well.

  31. I love meals like that – where both you and your husband/partner/whomever are each helping out in different ways. It makes dinner-time more fun, in my opinion 🙂

  33. delicious dinner!! I’d make it, but I already get picked on at my dorm for eating health food. I suppose tofu would add more to the fire. :/
    I also tried that true delights bar today and it really did delight me 😀 haha that was lame, but it was so good!
    oh, and I really want to try that sweet potato + edemame dish. two of my favorites!!!

    oh, and I love down dog and crescent lunge, but I loathe boat. Even though it really works my core it just hurts!!
