happiness is…

beautiful 75* Florida weather and a boat ramp right across the street from my parents house…

…the “kids” getting a chance to swim at the end of December…

…a Christmas Feast on my parents’ back patio because the weather was so lovely…

…which included a very tasty Honeybaked Ham

…and roasted cauliflower and onions dusted with smoked paprika (along with green bean casserole, mashed potatoes and cranberries)…

…a feast that concluded with one of my all-time favorite desserts, Coconut Mango White Chocolate Bread Pudding with Rum Sauce [recipe to come]…

…along with the most amazing chocolate mousse I’ve ever experienced [recipe to come]…

…and most of all, an afternoon spent with some of my favorite people.  🙂

Merry Christmas Everyone!!!  Tomorrow the hubb and I are driving 45 minutes north to hang out with my dad and stepfamily…I’m really looking forward to seeing them!  And Saturday we’ll be back at my mom’s so that she and I can enjoy one of my Christmas gifts…a day at the spa!  🙂
